I’m first generation Italian…my mom used to make something we called bread & beans in English but something else in Italian. Cannellini beans boiled with endive or broccoli rabe or some other greens, served over hunks of crusty Italian bread…very good, very filling & we all loved it. This kind of reminds me of that.

No joke you could afford Chile sheen levels of “winning” if you platted and presented a menu with stuff like this on it. This would be a brunch menu item and it would sell like hot cakes . . . Well maybe not like hot cakes since you should be selling Johnny cakes to appeal to the hipsters and Italians that would frequent such a place. If anyone gets all the references in here then you’re pretty good and I love you like a brother in law, I wanted to say brother but I had to comprise and eat a grilled cheese off the radiator instead.

Can you just fry the greens to lightly wilt them in the pan where you eventually add the garlic, instead of blanching? In fact, aside from the mashing, I imagine you could do most of the toppings in one pot for simplicity

Dam, I literally made a similar version of this yesterday for this first time! the recipe I used was vegetarian and included roasted cherry tomatoes and parmigiano reggiano but was very similar. The one change I would make to this one is to let the bean fry in the oil for a few minutes before mashing to give a better texture and toasted flavor. My GF and I watch your videos religiously and cant wait to get home and show her this, I am sure we will have a good laugh. For anyone curious, the recipe is from Anna Jones's cook book One Pan, Pot, Planet.

@Roman von ungern-sternberg lard never ever. I got to find away to make them edible. I think part of it’s the texture. Maybe the way he did it I can try. I love garlic & onions. I just can’t eat them raw like in a salad.

@BeachGirl. Cook in lard or butter then and see if either works and if they don’t play around with fats and oils till you find one that works and do the same with salts, greens etc you owe it to yourself to be able to make food you enjoy.

Having used both pre-grated and self-grated cheese, I'll opt for the pre-grated every time. I find the difference is usually imperceptible and not worth the mess and effort of doing the grating myself.

It's cause its coated with cellulose to stop it sticking together in the bag, and cellulose doesn't melt so it'll be a bit grainy in melted dishes. It's not the end of the world but grating cheese takes like 3 or 4 seconds so 🤷

Also, if there is anyone in this world that works a full work week and needs to have an easy way to prepare a good home cooked meal, what in the world is wrong with a pre-grated cheese. Why is there a huge section of the grocery store devoted to pre-grated cheese? Because there is a majority of the working world that needs help in getting a decent home cooked meal on the table quicker. Otherwise let's just all go through the drive through if pre-grated cheese is so terrible.
