@Motti Shneor hot chocolate powder has sugar. Cocoa powder is just unsweetened cocoa and is often used to dust a pan for a chocolate cake so there is no white residue.

I'm not sure it's good - cocoa powder has fat and sugars and lots of other sticky constituents that may do the opposite of what you try to do. I would use the almonds-flour (thin ground almonds) instead which are not sticky - or revert to some rough corn-flour corn-meal polenta-like thing. I like to use it for almost everything - but it gives a grainy touch and bite to the underside. I like it but...

Made this tonight for a dinner party and it was a huge hit! I got a jar of organic pitted dark red Marachino cherries and used those instead of raspberries, and used the juice in the jar to make a thickened cherry sauce. Also used chili flavored dark chocolate bars to melt. All this and whipped cream .... one of the best desserts of my life. Thank you Chef John!

I made this yesterday for my partner and I to have for Valentine's Day dessert. It was excellent. I'm not big on changing recipes but I didn't have any chocolate liqueur, so I subbed 2 teaspoons espresso powder and 1 teaspoon vanilla. As for the topping, I covered it with a chocolate miroir glaze. Not exactly cake to try it on but it was impressive, if not perfect. Raspberries and vanilla ice cream and the food coma is complete. Thanks for a great recipe.

Chef John! Making this this afternoon. The beating of the eggs took at least 20 minutes and started it while the chocolate and butter were melting. Prep time here in my kitchen was about double the written directions. Am sure we will love it like all your recipes but heads-up to those who take the time directions to heart.

This weekend I made this 'Torta Caprese' a keto version with monk fruit sweetner, and boy oh boy, I have to tell you, it's already half gone in one day. The recipe couldn't have satisfied a chocoholic any better. So easy to make too. Thanks Chef John!

I made this and opted for a chocolate ganache rather than the powdered cocoa and sugar topping. It was so delish. My almond flour was more of a meal and should have been finer so I will pulse it next time. I think it will produce a silkier consistency. I decided not to put a 'heart on' my cake and made a coulis instead. 🤭

Not likely. It's a spirit so wherever you buy alcohol. Look for Mr. Black or Kahlua or Tia Maria. In the baking aisle you can find coffee extract/concrete. These have a much stronger flavor than liqueur so use 0.25-0.5 teaspoons plus 1 teaspoon of vanilla extract. Can also use a 1-2 teaspoons of espresso powder. In any case, the goal is actually not to taste coffee in the tort. Add just enough to make the chocolate flavor taste more rich and complex. 🍫🍫🍫

Haha I baked a very similar chocolate cake just a few hours ago, but I used cake flour with baking powder instead of the almonds and whipped my egg whites separately with sugar :) Perfect spongey consistency so my testing for valentines day was a great success, might also give your version a try tho!

This looks like fun to make but I am very allergic to almods - any thoughts on a substitute. My wife uses artificial almond extract for things to get the almond taste so that part is possible. Maybe something like coconut flour. I keep peanut powder around but I think it would be too strong of a flavor for this dish (not for me, I think PB is a food group). Great video! Thanks!

You could simply skip it. I think some whey powder and a little cornstarch would be fine though, you just need a dry ingredient to help stabilise the soft custard into a tart.

@Darline Rita-Sarmento you're totally right darling! It's a language difference. In portuguese and Spanish (maybe french too) flour is anything finely pounded until it becomes dust! Of course the most common is weat but you could call the result of almost anything grinded as "flour". :)

It’s called almond flour but it is ground almonds. Regular or real flour is made with ground wheat.

In the U.S., we often use the term “flourless” to mean “without wheat flour.” Wheat flour is our standard flour for cooking & baking. But then again, Chef John coats the pan with wheat flour (I believe) in the beginning of the recipe. 😊

You can use cocoa powder in lieu of the flour to line the pan and prevent sticking. Advantages: more attractive finished cake, truly gluten free recipe. Disadvantages: none that I can think of.

To summarize, I would say scrambled eggs with almond chocolate. Extra butter and cocoa, why not just extra chocolate, should be the same. The pinch of sugar could be probably reduced 30% as for everything, and the alcohol and almond flour content up, maybe walnut instead of almond. A lot to experiment.

This took a lot longer than 30 minutes.I’m now worried about burning it. I have had it in for 35 minutes and the center is still raw batter! I’ll be pulling it at 40 minutes whether it’s done or not because it WILL burn.
