This fast, fun, chicken and rice casserole was supposed to be a delicious tribute to the Buffalo Bills appearance in the Super Bowl, but due to circumstances beyond my control, that didn’t work out as planned. The good news is, this was amazing, and I’m really more of a Giants fan anyway. Enjoy!

I made this and it was fantastic. I don't like celery and I felt it needed some kind of texture so I pan toasted some panko in butter and sprinkled it on top. I HIGHLY recommend adding that to this dish because it was delicious and I can't even imagine it without it now.

It reminded me of a Persian rice dish called Tahchin Ghalebi. If you substitute the red spices and hot sauce with a heavy dose of safran and tumeric, and mayo with some rich yogurt then mix it with your rice instead of your chicken, and put your rice on top instead of at the bottom, you would get a delicious Tahchin Ghalebi dish (you need to undercook the rice in the first step to get it right though) -- give it a try ;)

I made this for lunch today with a few substitutions. It was super amazingly delicious. Not hot at all, but actually lovely and creamy. I particularly loved the addition of the celery - amazing. Perhaps next time I may put a little more hot sauce.

This is a lot like Japanese gratin/doria! For that dish the sauce is more of a bechamel, but it's so good; you should give it a try!

@Lisa Bishop Oh no, no problem with the mayo! I'm allergic to capsaicin so I'd have to modify the recipe quite a bit so I was just wondering what other kinds of sauces could go with the chicken. The cream of mushroom and the french onion soup both sound very tasty :)

@Yieri oh yeà, if the mayo part is what you don't like, try sour cream w a touch of vinegar added. That's how i make my Mac, potato, coleslaw , tuna fish salads etc. Started doing that when i became allergic to eggs. If i don't tell people, they just like it. Once i tell them, they usually turn red añd say how they hate sour cream 😂😂😂 the best was when i married my ex ,who hated sour cream!!! Bought a big tub of French onion dip, watched him eat over 1/2 of it, then read the ingredients,lol. Yeà, he turned a really pretty shade of deep red!!!

A layer of a semi-firm melting cheese like a mozzerella or a Queso Oaxaca on the top would take this from "Dynamite" to "Small Thermonuclear Device." Like a Buffalo chicken version of Seafood Doria. And yes... I'd still use the blue cheese too. Because why not?
