Aw Chef, this was a nostalgic video for me. When my mom had to travel abroad for her dad's funeral, MY dad took care of my brother and I by himself for the first time. And among the many mishaps during those several weeks there were a few instances of burned hamburger helper. Bless his heart. He passed away last month and I miss him so much. I also love beef stroganoff, so I think I need to try this out soon. For me, and dear old dad: Bob ❤️

@ A M, I’m truly sorry for your loss of your dad. This reminds me of years ago when my husband’s uncle would visit us every Wednesday evening. He never wanted anything else but beef stroganoff. Back then I made it with beef tips. And not this exact recipe, but pretty close. I haven’t thought about that in years. But it was such a small token to make an old man so happy. I’m glad I could do that for him.

This is similar to the recipe I've been using, except I also add Worcestershire sauce and dijon/brown mustard. Delicious either way!

@Mike Fisher I think if I wanted a lighter version, I would go totally Russian and use 10 to 12% sour cream (smetana) and cut that fat in HALF from crème fraiche, and keep the taste right where it should be. Who knows what the envelope of magic white powder in the box was.

You know what is also great? The tiniest bit of tomato. Especially if you but it in with the beef and caramelize it a bit. In the end, it should be a small enough amount that no one knows it's in there, but it does give it a little more of a pop.

Try it with cream cheese! Instead of adding flour, I add 8 oz cream cheese and 8 oz sour cream at the end.

Nicely done John, looks amazing! From the midwest here and around my neck of the woods this was what we called Stroganoff. I honestly didn't know there was another classic version until I was almost 30. Typically I add thyme in with the meat mix and Worcestershire sauce and/or balsamic vinegar into the sauce near the end for a little acidity. Quite good either way!

Not only did I eat Hamburger Helper pretty often as a kid, I also ate it regularly as a young adult when I moved into my first apartment! I even bought a 2qt microwaveable casserole for that purpose; it didn't shorten the cooking time at all, but it was less messy than preparing HH on the stove top.

The way you show us to cook the pasta in the sauce rather than in boiling water, as in the recipe for orecchiette and sausage, puts these dishes in another category! My family and guest adore it! The pasta absorbs whichever herb or aromatic you’re using and I feel confident to be creative. Always a huge hit and now I’m asked for’to go bags’ as my husband bragged how much more the flavors develop by day 2 & 3!

I've been making ground beef stroganoff for a while now, and this looks like a great shortcut to get it all in one pan. Always hated having to cook the noodles separate. However, I would absolutely add some Worcestershire sauce!

I learned hot to make hamburger stroganoff from a woman on a ranch. She used bacon ends and cooked the mushrooms, onions, and hamburger in bacon grease. Oh yeah :) Happy cooking everyone!

I made this and it was easy and DELICIOUS. I love stroganoff, but it takes a lot of time to make so sadly is not usually a week-day meal. This recipe was a gamechanger, however. And the next week, I did pretty much the same thing but made a one-pan chicken paprikash. These were the changes I made: swapped the beef broth with chicken broth; deboned chicken thighs instead of beef; skipped the garlic, mushrooms, and vodka; added 1 tablespoon of paprika. Chef John inspires me to do real good food, real simple! ^_^

I did make this tonight! I replaced the vodka with white cooking wine. I have to say this is THE BEST beef Stroganoff I've ever eaten in my life. Wife loved it too. The one pan method is perfect. I did have to add a bit more water at the end though and let it cook for about three more minutes. Thank you, Chef John! Thank you for making your videos very pleasant and funny. Your videos concentrate on the food only. Really helps with the preparation too. We've made your Korean BBQ Meatballs, your Parmesan Chicken (your version is the best too), your Chicken Marsala Milanese and so many others. All delicious and you make everything so easy to understand. Can't wait for more recipes.

Ok Chef John, about 2 weeks ago I decided it was time to make homemade ground beef stroganoff (not Hamburger Helper lol) and I got a recipe and tried it out. Everything that could go wrong went wrong, (burning, spilling an entire grinder of whole peppercorns into the beef, running late, etc.) so I already decided I was gonna make it again soon. Then. The next couple days, Adam Ragusea AND you BOTH put out BETTER recipes!!! Well. Tonight I made your version, and it was DELICIOUS!! Doing it as a one pan makes it so much easier, adding in some alcohol (I had to sub white wine which was still delicious) adds so much flavor, and another nice side effect of the one pan version is that it adds all that flavor from the sauce INTO the noodles. So yummy, incorporated, and perfect! I highly recommend subbing sone of the salt for MSG to really enhance the beefy flavor if you’re like me and don’t like mushrooms 😂 Thanks Chef John!! I’ll be making it again another time or two before winter’s through! ✨❤️

My go-to wodka for cooking stroganoff is definitely the Polish bison grass wodka called Zubrówka: it’s got an actual taste to it that fits in really well with sauces.

Growing up, Hamburger Helper stroganoff was one of my favorite foods (ok, it still is, but now days you gotta get the "Deluxe" box). I remember back when it came with the separate powered sour cream stuff that you mixed and added at the very end. But, HH introduced me to stroganoff in general and I think I've only ever had one recipe for it that I didn't love. So, happy to add this one to my arsenal of stroganoff recipes!

Hi Chef John, when pan frying, is there a reason why sometimes you should use oil, butter, or an oil butter mixture? Other than instances where butter will burn, what would make you choose one over another?

Made it today, and it turns out perfect! The souse is extra delicious! One note, it would be better if ingredients were measured by weight and not by volume. For example, the quantity of noodles depends on their shape if we measure them in cups...Just recommendation.

I got a couple of those frozen thinly sliced steak packages really cheap, and they work great in this kind of one-dish meal. You can swap the sour cream for a mix of american/velveeta/whatever melty cheese and some good cheese for flavor, and you get a better version of the cheesy mac box!

@0623kaboom all these "supposed to-s", just do whatever you want, love! Your kitchen, your rules. Real cheese will probably separate in hot saucy dishes, so velveeta, with its citric acid emulsifier, will work best for silky smooth mac n cheeses, or, indeed in this one pan stroganoff. But you do you!

@0623kaboom Kraft cheese would work just as well, yes, so long as it's one of their actual cheese-based offerings. The point here is that it's a quick and easy way to get sodium citrate or an equivalent emulsifier into your cheese sauce. You could also just get your own sodium citrate, but that adds an extra step to the process.

velveeta EWWWW .... may as well use kraft cheese slices ... or better the plastic they come in ... same difference ... just add some extra hydrogen and you have them ... real cheese ALWAYS real cheese ... and sour cream is best because stroganoff is supposed to have an acid tang ... and is normally paired with a spicey dish like a curry or hot wings etc ... the acid and the spice blend well in the mouth and counteract each other JUST enough to make your mouth come alive

I made something like this from leftover ham gravy. The gravy was sweet and savory and I added some cayenne for that sweet and spicy flavor. It was like sweet hamburger helper and it was amazing.

i like a couple of handfuls of frozen peas, never bad to add some veg, and i find that peas are a textural addition that i love in this dish. Making this tonight with fresh egg pasta, since here in the UK, its not easy to find the american style wide, flat egg noodles..i'm going to increase the flour to make up for the fact that fresh pasta will absorb less liquid.

I needed this. I grew up having hamburger helper in the food pantry. It was a quick and tasty meal. Unfortunately, over the past few years they have changed something. It tastes like nothing now. It is now so bland it's hardly edible. Hopefully this new recipe you just showed us will help me get that hamburger helper fix that I miss. lol

I made this, and it was tasty. However, if I made it again I would use two or three times the amount of mushrooms - they cook down anyway, and were very good.

Just made 2 boxes of Hamburger Helper stroganoff last night 😂 probably gonna polish off the 2nd box when I get home from work later Definitely leaving the shrooms out when I give this a try but otherwise looks good!
