Walmart was selling burnt ends dip for a while and it was very tasty. As with all actually good things they sell, they took it off the shelf a few months ago and I’m not sure it’s ever coming back.

@Lee Klinglesmith i’d probably do a little cheez whiz but mostly provolone, cream cheese and monterey jack. Then mix with much smaller cubed pieces of the brisket, and top with chopped vegetables and more provolone. Seasoned with BBQ seasonings but no sauce. Then serve with crostinis and bbq sauce in a bottle.

Yes, I agree. I don't think it is worth the effort. Burnt ends need a fork, not a ton of bread messing it up. But as an experimental dish, you won't have genius without a miss here and there.

I first had burnt ends from Jack Stack's in Kansas City. It was glorious. I grew up on the East Coast and had cheesesteaks frequently. They too are glorious! The idea of combining these two things is intriguing but also terrifying...like mixing Stroganoff and Lasagna...there's potential for unbelievable greatness...but also horrible failure.

You're not kidding about stroganoff lasagna- here in Penn Dutch country there's something called "German Lasagna" which is kind of a white sauce lasagna/ sauerkraut kielbasa dish not dissimilar to a layered stroganoff.

I've always been a fan of Cubism. It's purpose is to show things how they really are, not just what they look like. Also, the closer you can get the cubes to uniformity, the more evenly they cook! I think that's important. 😉😋😎

Chef John, it’s traditional to use the cheese whiz from a jar, not from the can. The jar is hard to find but it’s worth it because the Worcestershire sauce comes out more

@LeCharles07 Yes, a jar. Cheez Whiz typically comes in a jar. It's become synonymous with Easy Cheese (the canned cheese product). Now, you _can_ find Cheez Whiz in an air can, but it's not nearly as common as Easy Cheese.

Or, halfway through baking, add a lot of sliced onions underneath the meat and finish baking and the onions basically come out very carmely and yummy too.. if you love onions.. fresh sliced garlic is also excellent. Love you Chef👍

In being Australian, I have only ever heard of cheese whiz. If it is available around here, it tends to be in stores that imports such things for some of the American Ex-Pats living here. Upon saying that, it is something I am curious to try, at least once.

This isn't Cheeze Whiz. This was cheese in a can. Not the same thing. Cheeze Wiz is supposed to be melted. It generally comes in a glass jar in the supermarket, or industrial strength in a can. If you have ever had "nacho" cheese with your tortilla chips, this is cheeze wiz with spices.

I like how instead of opening the foil directly on the cutting board, he had to get a bowl, put the beef in the bowl for a few seconds, and THEN put it on the cutting board. Cracks me up but i still appreciate this video as I have always ignored KC bbq but now that I'm running low on types of BBQ to learn about, I'm willing to check KC style out.

I’m from Kansas City and we love our burnt ends. This is called poor man’s burnt ends. Here’s how I make it. Chuck roast, salt n pepper. Smoke on my weber Smokey mountain at 225-250. Wrap at the stall, 160-ish, and continue until meat registers at 200, at that point I start checking for probe tenderness (it should feel like sliding into peanut butter) After that I rest for 30, then foil and chill the fridge. Slice into cubes the next day and into a foil pan with bbq sauce, brown sugar or honey, some rub and butter. Wrap top with foil and into oven at 300, stirring every 10 minutes. Cook til hot and serve on ciabatta bread
